Ingredients
  • 600 GR. hake
  • 20 prawns
  • 150 GR. flour
  • ½ l. water
  • 4 eggs
  • 125 ml. extra virgin olive oil
  • a teaspoon of sweet paprika
  • Salt
  • A few branches of parsley
For the sauce
  • 3 leeks
  • 1 spring onion
  • ½ Cup of white wine
  • ½ l. fish broth
  • extra virgin olive oil
  • Salt
Instructions
  1. Clean and deloin hake. Make a broth with your head, skin and central spine and add a sprig of parsley, Cook for 15-20 minutes.
  2. Slice the leeks and chop the spring onion. Sauté the vegetables with a little oil. When they're soft, Dip them in wine and fish broth and cook them for 15 minutes. Mash them with the masher. Season with salt and set the sauce aside.
  3. Put a splash of oil and water in a saucepan, Add a pinch of salt. When break to a boil, Remove from heat, add the sifted flour and stir the mixture with a whisk. PON, again, Heat over low heat and add the eggs one at a time, stirring constantly.

Notes
