Ingredients
  • 10 huesillos, cooked, stylish and chunks (reserve the juice of the ossicles)
  • 1 1/2 Cup of mote, cooked
  • 1/2 cup orange juice
  • 4 tablespoons sugar
  • 1 Cup of heavy cream
  • 2 leaves of gelatine, hydrated
  • Mote, juice and ossicles cooked and in wedges for garnish.
Instructions
  1. place the ossicles, Mote, 1/2 cup juice of ossicles, Orange juice, sugar and cream in processor, beating until a puree.
  2. Add the gelatine hydrated and if necessary aser a little more of the juice of ossicles
  3. pour the above mixture in a bowl and freeze in the freezer until solid
  4. Once frozen transfer to the food processor and grind until ice crystals. Refreeze ice cream until ready to serve.
  5. distribute ice cream in individual cups and serve immediately, decorated with mote and ossicles in wedges.
