Ingredients
- 10 huesillos, cooked, stylish and chunks (reserve the juice of the ossicles)
- 1 1/2 Cup of mote, cooked
- 1/2 cup orange juice
- 4 tablespoons sugar
- 1 Cup of heavy cream
- 2 leaves of gelatine, hydrated
- Mote, juice and ossicles cooked and in wedges for garnish.
Instructions
- place the ossicles, Mote, 1/2 cup juice of ossicles, Orange juice, sugar and cream in processor, beating until a puree.
- Add the gelatine hydrated and if necessary aser a little more of the juice of ossicles
- pour the above mixture in a bowl and freeze in the freezer until solid
- Once frozen transfer to the food processor and grind until ice crystals. Refreeze ice cream until ready to serve.
- distribute ice cream in individual cups and serve immediately, decorated with mote and ossicles in wedges.
