  • 2 kg of fresh Quince
  • the grated peel of 1 lemon and 1 Orange
  • 2 teaspoons ground cinnamon
  • 2 Spoon das Kirsch
  • 50 g candied lemon rind
  • 50 g of candied orange rind
  • 1 kg of sugar

  1. The quinces clean with a cloth, cut into four parts and remove stems. Cook them covered with water during 45 minutes to fire slow, drain in a colander and put them in a dish.
  2. Mix the grated lemon and orange. the cinnamon and the kirsch with the quinces and allow to stand overnight. Chop very fine candied orange and lemon rinds.
  3. Line a baking sheet with aluminum foil. Through the Chinese Quince. weigh it and mix it with an equal amount of sugar.
  4. Cook, stirring with a wooden spoon until it is released from the stew. Add last, the candied lemon and orange peel.
  5. Spread the dough on the foil so it has 1 cm. of height and let dry in the average height of the oven to 50 grades during 3-4 hours. Leave to cool.
  6. Cut diamonds of equal size and insert them in sugar.
