Ingredients
  • 2 perqueña eggplant cut into dice
  • 1 large onion, diced
  • 1 red pepper cut equally
  • 1 green pepper cut equally
  • Oil
  • Pepper black
  • Oregano.
Instructions
  1. The aubergine is cut and left to rest with salt for half an hour.
  2. It rinses and in a nonstick casserole the oil is poured ( very little ) and lightly browned aubergine dice.
  3. Then pour the peppers and onion, Mix, we cover and leave a fire under a few 20 minutes.
  4. We check mid-cooking to mix and add oregano and black pepper to taste.
  5. We didn't throw oregano from the beginning so it doesn't burn and lose the scent.
Notes
  • It can be served warm or cold.
