Ingredients
- 2 diced eggplant
- 1 large onion, diced
- 1 red pepper cut in the same way
- 1 green pepper cut equally
- Oil
- Pepper black
- Oregano.
Instructions
- Cut the eggplant and let it rest with salt for half an hour.
- Rinse and pour the oil into a nonstick pan ( very little ) and lightly brown the eggplant cubes.
- Then add the peppers and onion, Mix, Cover and leave on fire under some 20 minutes.
- Check halfway through cooking to mix and add the oregano and black pepper to taste.
- We do not add the oregano from the beginning so that it does not burn and lose the aroma.
Notes
- It can be served warm or cold.
