Ingredients
  • 2 diced eggplant
  • 1 large onion, diced
  • 1 red pepper cut in the same way
  • 1 green pepper cut equally
  • Oil
  • Pepper black
  • Oregano.
Instructions
  1. Cut the eggplant and let it rest with salt for half an hour.
  2. Rinse and pour the oil into a nonstick pan ( very little ) and lightly brown the eggplant cubes.
  3. Then add the peppers and onion, Mix, Cover and leave on fire under some 20 minutes.
  4. Check halfway through cooking to mix and add the oregano and black pepper to taste.
  5. We do not add the oregano from the beginning so that it does not burn and lose the aroma.
Notes
  • It can be served warm or cold.
