Ingredients
- 650 g flour
- 50 g pressed yeast
- 150 g sugar
- 1/4 l of lukewarm milk
- 200 g butter
- 5 egg yolks
- 1 teaspoon full of salt
- 1 pinch of ground nutmeg
- the bark of 1 grated lemon
- 100 g of chopped candied lemon rind
- 50 g of chopped candied orange rind
- 150 g of raisins
- 1 egg yolk

Instructions
- Lining a high pan with paper beard oiled. Sift the flour in a dish, make a hole in the Center, cut inside the pressed yeast and stir with a little sugar, milk and a little flour. Leave to ferment during 15 minutes.
- Beat melted butter, the 5 egg yolks, spices and lemon with previous mass cortex and the rest of the flour until the dough bubbles. Leave to ferment during 15 minutes.
- Add the candied lemon and orange peel and raisins, form a ball with the dough, Insert in the mould and leave to ferment others 15 minutes.
- Heat oven to 200 degrees. Spread the cake with the whipped egg yolk, cut into the shape of a cross and cook in the bottom during 90 minutes.
- Cool the cake in the Pan, pour onto a wire rack and leave to cool completely.
- Remove paper beard before chop it.
