Bavaroise of nougat with Thermomix food processor

Ingredients
- • 250 ml of cream liquid
- • 1 Tablet of turrón of Jijona
- • 2 eggs
- • 3 egg yolks
- • 3 egg whites
- • 60 ml milk
- • 1 lime gelatin envelope
- • Lemon juice
- • Salt
- • Liquid caramel (for mold)
Instructions
- Place in the Thermomix the butterfly on the blades, with cold machine and tumbler. Add the cream and put it on speed 3. Tip into a bowl and reserve.
- Then, remove the butterfly of the Thermomix, Add nougat and crush during 20 seconds in speed 8, using the spatula.
- Then, Add eggs and yolks, and schedule 4 minutes, 70º, speed 5 in the Thermomix. Add the cold milk and gelatin and mix during 10 seconds to speed 4, until it is homogeneous. Pour into a bowl and allow to cool.
- Thoroughly wash the beaker, knives and butterfly and mount the egg whites along with the lemon and salt, programming 3 minutes to speed 2 1/2 or 3.
- Mix the egg whites, with the cream and nougat cream, with the spatula and pour in a caramelized mould.
- Place in the refrigerator until ready to serve. Remove from the Tin it and decorate to taste.
