Ingredients
  • 1 kg. carrots
  • 6 Basil leaves
  • 2 CDAS. sugar
  • 6 Pepper seeds
  • 1 cinnamon sprig
  • 4 cloves
  • the rind of a lemon
  • 1/2 TSP. nutmeg
  • oil
  • 4 cups of water
  • white wine vinegar
  • 1 pinch of salt
Instructions
  1. Peel and cut the carrots to your liking. Put a saucepan on the fire with 4 cups of water and a pinch of salt. Add the carrots and let them boil for 8 minutes. Drain them and leave them on a tea towel.
  2. Distribute carrots in airtight jars, which must be clean and dry. Distribute basil equitably, sugar, nutmeg, cinnamon, nail, pepper and lemon rind.
  3. Fill the jar with the carrots and leave a space between the mouth of the container and the carrots. Cover the contents with vinegar and pour a light layer of oil.
  4. Hermetically close the bottle. Store it in a dry, dark place. Wait 30 days before opening the bottle. Serve as a garnish for meats.
