Ingredients
- 1/2 Cup dry white wine
- 1 medium Leek into thin slices
- 120 grams of cooked miniature shrimp
- 1/2 celery root, cut into thin strips
- 8 sombreritos white mushrooms sliced
- 1 CDA. lemon juice
- 120 grams of canned artichoke hearts, drained. 1 red pepper, sliced thin
- chopped fresh chives
- chopped fresh tarragon
Instructions
- Put the wine and leeks in a medium saucepan. Boil the leeks on medium heat for 5-6 min. until tender. Remove leeks and set aside. Simmer the cooking liquid. Remove the Pan from the fire. Add the shrimp in the Pan.
- Leave to cool in the cooking liquid. In a medium mixing bowl stir, celery root, mushrooms and lemon juice. Add the artichokes, the sweet peppers and reserved leeks.
- Remove shrimp from liquid and put it in the salad. Combine well. Divide the salad in 4 dishes. Garnish with chives and tarragon and serve.
