Ingredients
- Half a kilo of choritos
- Half a kilo of machas or clams
- Two crabs
- A cup of milk
- Two cups of breadcrumbs
- Half a kilo of buttery cheese
- Six tablespoons butter
- Two egg yolks
- Grated cheese
- Salt, lemon and hot pepper
- 1 Onion
- half paprika
Instructions
- Cook seafood in boiling salt water, keeping the water in which they have been cooked. Once cooked, its meat is removed (to the crab meat and coral).
- The bread crumb is cooked in the milk and the reserved cooking water is added to it.. This should become a thick sauce.
- Add the buttery cheese in thin slices, butter, two egg yolks and season with salt, lemon and hot pepper.
- Sauté onion with paprika and then add the seafood sautéing for about three minutes. Once all this is done, the seafood is added in a clay pan, It is topped with the bread sauce and then sprinkled with grated cheese. It is taken to oven for about thirty minutes to gratin.
