Ingredients
  • 1 kg of fish varied (for example: Golden, Galeras, crabs, monkfish, Fish Heads, small fish of rock)
  • 1 Onion
  • 1 teaspoon ground red pepper
  • 1 Bay leaf
  • 1 clove of garlic
  • 1 grated tomato
  • 500 g rice
  • 1,5 litre of water
  • a few strands of Saffron , Salt, olive oil.
Instructions
  1. Put in a pot with water whole fish, the onion peeled and cut, the bay leaf and a pinch of salt. Bring to a boil and cook for a few 20 minutes.
  2. BREW, reserve the broth and set aside the fish. It must be 1 litre of broth.
  3. Prepare a garlic clove minced, the salt and the toasted saffron. Dilute with a little stock.
  4. Put a paella pan to fire, pour the oil and when hot add the grated tomato, the chopped and the paprika, stir and cook slowly between 3 and 4 minutes.
  5. Add the rice and mix well so soak in the sauce.
  6. Pour the hot broth, Cook over high heat about 5 minutes and cook a few 15 more simmering. Check salt.
  7. Remove from the heat, Let stand 5 minutes and serve in the same casserole/paella pan.
