Ingredients
  • 700 g Zucchini
  • Salt
  • 1 medium onion
  • 20 g butter
  • 1 bunch of parsley
  • 2 eggs
  • 1 tablespoon of mint or dill sting
  • 120 g of breadcrumbs
  • 100 g emmental cheese freshly grated
  • Pepper freshly ground
  • a little flour
  • 8-10 tablespoons olive or sunflower for frying oil
Instructions
  1. Wash the zucchini and retired after the peduncles, cut into slices. cook them in water with salt for a few 10 minutes.
  2. Drain well, make a puree with them and place it in a bowl. grate the onion directly on the source of the zucchini. melt the butter, bread crumbs and cheese, and mix it all well. season with salt and pepper and let stand for 5 minutes.
  3. For each pancake, take 1 tablespoon of dough and shape it with your hands slightly smeared in oil. once formed, put flour in a dish and pass through it.
  4. Heat the oil in a frying pan and fry the Pancakes for 2-3 minutes per side until golden brown.
  5. Remove from the Pan and let them drain on paper towels.
