Ingredients
  • 10 artichokes
  • 8 eggs
  • 1 Onion
  • extra virgin olive oil
  • lemon juice
  • Salt
Instructions
  1. We started cleaning the artichokes, to just stay with hearts, and we start each in 8 pieces (in quarters and then each quarter in half).
  2. We put water to boil in a saucepan, and when it boils, Add the artichoke hearts with a splash of lemon juice (It will prevent that blacks are put by oxidation).Cook them until they are almost made.
  3. Remove them from the fire and reserve them in water.
  4. Beat the eggs in a bowl, and salt to taste.
  5. Strain the artichoke hearts and add them to the bowl with the eggs, beaten. We also add the poached onion.
  6. Put olive oil in a nonstick skillet and when hot add the tortilla mix. Cover the skillet. Better to have small fire so it won't burn.
  7. We let it curdle on the one hand and on the other to taste and serve.
