Ingredients
- 10 artichokes
- 8 eggs
- 1 Onion
- extra virgin olive oil
- lemon juice
- Salt
Instructions
- We started cleaning the artichokes, to just stay with hearts, and we start each in 8 pieces (in quarters and then each quarter in half).
- We put water to boil in a saucepan, and when it boils, Add the artichoke hearts with a splash of lemon juice (It will prevent that blacks are put by oxidation).Cook them until they are almost made.
- Remove them from the fire and reserve them in water.
- Beat the eggs in a bowl, and salt to taste.
- Strain the artichoke hearts and add them to the bowl with the eggs, beaten. We also add the poached onion.
- Put olive oil in a nonstick skillet and when hot add the tortilla mix. Cover the skillet. Better to have small fire so it won't burn.
- We let it curdle on the one hand and on the other to taste and serve.
