Ingredients
  • 1 piece of 5 cm of fresh galanga
  • 2 cups (500 ml) coconut milk
  • 1 Cup (250 ml) chicken broth
  • 3 chicken breast fillets, cut into thin strips
  • 1-2 teaspoons of red chilli, fine lyanes
  • 2 tablespoons of fish sauce
  • 1 teaspoon fine brown sugar
  • 1/4 Cup (7 g) fresh coriander leaves
Instructions
  1. Peel the galanga and cut it into thin slices. Mix the galanga, coconut milk and broth in a medium saucepan. Bring to the boil and let it simmer, uncovered, during 10 minutes; stir occasionally.
  2. Add the chicken meat strips and chopped chilli and keep slowing down others 8 minutes.
  3. Add fish sauce and brown sugar; Remove. Add the coriander leaves and serve immediately with a few sprigs of coriander, If you want to.
Notes
  • If you can't find the fresh galanga, you can use 5 large slices of dried galanga. Before incorporating them into the stew, should soften them by soaking them in some boiling water for 10 minutes; cut them down into small pieces. Add the soaking broth to the chicken stock until you fill a cup (250 ml) and use it to prepare the recipe.
