Ingredients
  • -2 tablespoons Parmesan cheese
  • -3 tablespoons butter
  • -3 tablespoons of wheat flour
  • -3/4 Cup boiling milk
  • -4 egg yolks
  • -1 Cup roquefort
  • -1/2 tablespoon of salt
  • -1/4 Spoon of pepper
  • -a pinch of paprika
  • -6 egg whites
Instructions
  1. Grease a mould for souffe de 1 2/2 litres and lightly spray with 2 tablespoons Parmesan cheese.
  2. Remove the cheese which by gentle tapping on mold, and put it all to cool.
  3. Heat oven to 200 degrees. Melt the butter in a pot; Add flour and cook slowly for one minute, stirring constantly. Incorporate the milk boiling, and pour it any time to. Remove from the heat, stirring with a wooden spoon, until mixture thickens.
  4. Add the egg yolks one by one, stirring after each. Incorporate the roquefort cheese, Salt, the pepper and paprika.
  5. Leave the mixture, keep the egg whites at room temperature and whisk them until they form peaks. Also add to the mix.
  6. Lower the temperature to 190 degrees and bake for 25 minutes, remove from the oven and serve immediately.
  7. This rich recipe will give you, for a meal in between 6 and 8 people. You can serve it without problem as a Starter.
