Ingredients
  • 4 large onions
  • 20 GR of butter
  • 20 cm3 of olive oil
  • 30 GR of flour 0000
  • 25 cm3 of Marsala
  • 1 tablespoon Dijon mustard
  • 1 liter of meat broth
  • 4 slices of bread field or other
  • 100 g of gruyere cheese
  • 2 sprigs of thyme
  • Salt and pepper
Instructions
  1. STEP 1
  2. In a pan sauté the onions cut into strips (strips), with olive oil and butter. They should cook over very low heat for a few 25 minutes approximately.
  3. Add the tablespoon of Dijon mustard and mix.
  4. Add the marsala and flour. It will form a paste which then will give consistency to the soup.
  5. Add the broth, salt and pepper, and thyme.
  6. Cook for a few 25 minutes or until soup reduces and is thick.
  7. STEP 2
  8. Place the slices of bread in a baking dish with olive, and cover with grated gruyere.
  9. STEP 3
  10. Remove from the oven when the bread is golden brown and the cheese au gratin.
