Heat the oil over low heat in a clay pot. Saute the garlic unpeeled and halved. When you begin to take color, put very chopped chorizo and ham and sauté. Add the bread cut into very thin slices. Shake the Pan so the bread to soak well with oil. Sprinkle paprika on top.
Immediately add ½ litre of water, salt and cumin and stir gently. Cook for 8 minutes over low heat.
Add the beaten eggs and stir until they are set. Serve in the same casserole.
