  • 200 g de vermicelli dried from mung (celopcan noodles)
  • 2 tablespoons oil
  • 10 shallots, in very thin slices
  • 3 cloves of garlic, fine chopped
  • 2 lemongrass stems (only the white part), in very thin slices
  • 1 red pepper, In Band-Aids 4 cm
  • 170 g of canned crab meat, well drained
  • 2 tablespoons of fish sauce
  • 2 spoonfuls of lime juice
  • 2 teaspoons sugar
  • 3 spring onions, in very fine rolls cut diagonally
  1. Soak the noodles in boiling water for 20 minutes for them to soften. Drain and cut several times with scissors so they are left in short pieces and can be eaten more easily.
  2. Heat oil in a wok or thick-bottomed frying pan over a high heat. Throw out the shallots, garlic and lemongrass v saltethem during 2 o 3 minutes.
  3. Add the pepper and salteel, continually stirring, during 30 seconds. Add the noodles and continue stirring. Cover and let it cook for one minute until the noodles are hot.
  4. Add crab meat, the fish sauce, lime juice and sugar; stir everything well with two wooden spoons. Season to taste with salt and pepper, accept it with the spring onion and serve it immediately.
  • If you can get it, fresh crab meat is delicious for this dish.
  • Some fishmongers sell it in refrigerated and hermetically sealed containers.
