  • 2 kg of Red Plums
  • 1 chopped red chilli
  • 1 tablespoon of salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground cloves
  • 1 teaspoon Jamaican pepper
  • 1 teaspoon ground ginger
  • 6 white wine vinegar cups
  • 1 kg of sugar
  1. Cut the plums in half and remove the bone.
  2. Pour the plums, the chilli, Salt, cayenne pepper, those nails, Jamaica pepper, the ginger, vinegar and sugar in a large heavy-bottomed frying pan. Bring to the boil, lower the heat to medium and cook while stirring until the sugar dissolves.
  3. Allow the mixture to cool a little and pour, by batches, in the chopper in order to give it a finer consistency. (To find out if the mixture is thick enough, check that it adheres to the spoon.) Make it finally in airtight crusts sterilized and preheated, and tapelos immediately.
  • If it's not plum time, you can use canned plums. Please, in that case, of the juice preserved and reduce the amount of vinegar to 1 liter.
