Ingredients
  • 2 kg of Red Plums
  • 1 chopped red chilli
  • 1 tablespoon of salt
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground cloves
  • 1 teaspoon Jamaican pepper
  • 1 teaspoon ground ginger
  • 6 white wine vinegar cups
  • 1 kg of sugar
Instructions
  1. Cut the plums in half and remove the bone.
  2. Pour the plums, the chilli, Salt, cayenne pepper, those nails, Jamaica pepper, the ginger, vinegar and sugar in a large heavy-bottomed frying pan. Bring to the boil,lower the heat to medium and cook while stirring until the sugar dissolves.
  3. Allow the mixture to cool a little and pour, by batches, in the chopper in order to give it a finer consistency. (To find out if the mixture is thick enough, check that it adheres to the spoon.) Make it finally in airtight crusts sterilized and preheated, and tapelos immediately.
Notes
  • If it's not plum time, you can use canned plums. Please, in that case, of the juice preserved and reduce the amount of vinegar to 1 liter.
