Ingredients
  • 3 eggs
  • 1 egg yolk
  • 160 g powdered sugar
  • 250 g of mannequin
  • the interior of a vanilla pod
  • 350 g flour
  • 1 egg yolk
  • 1 Cup coarse sugar
Instructions
  1. Cook eggs during 10-12 minutes, cool them down and peel them. Pass the yolks through a very fine sieve and mix them with fresh yolk and sieved powdered sugar.
  2. Gradually add the butter as soft as possible and the vanilla. Finally. add the sifted flour and work everything until you get a broken dough.
  3. Let the dough rest for 3 hours wrapped in foil in the fridge. Heat oven to 190 degrees Celsius. Divide the dough into walnut-sized pieces and make each a rounded bar of a few 10 length cm. Spread the tips of the bars with whipped egg yolk and form doughnuts.
  4. Spread the doughnuts with yolk and sprinkle thick sugar over the top. Place on a baking sheet and cook at medium height for 10-12 minutes.
  5. Peel the doughnuts off the tray with the help of a wide knife and leave to cool on a rack.
