  • 4 cooked egg yolks
  • 120 g powder sugar
  • 200 g butter
  • 2 sachets of vanilla powder
  • a pinch of salt
  • 300 g flour
On the other hand
  • 120 g almonds
  • 100 g sugar
  • 2 egg yolks
  • 1/2 Cup of currant jelly
  1. Pass the egg yolks coci das through a very fine sieve and stir with 80 g of sifted powdered sugar and the butter until creamy.
  2. Add the vanilla, salt and sieved flour and knead everything together. Leave the dough wrapped in aluminium foil during 2 hours in the refrigerator. Blanch in water boiling almonds, drain them. cut them into coarsely and mix with the sugar.
  3. Heat oven to 200 degrees. Extend the mass in such a way that you have 4 mm. of thickness and cut some rings 5 cm in diameter.
  4. Beat the fresh egg yolks, paint one side of the rings with them and insert the part wet in the mixture of almonds and sugar. Place the pretzels on a baking sheet with the wet side up and cook for 10-15 minutes to half-height.
  5. Remove pasta from the tray and leave to cool. Brush the bottom with red currant jelly, join them in twos and sift over the rest of the powdered sugar.
