Ingredients
  • 4 Cooked egg yolks
  • 120 g powder in sugar
  • 200 g butter
  • 2 Vanilla powder sachets
  • a pinch of salt
  • 300 g flour
On the other hand
  • 120 g almonds
  • 100 g sugar
  • 2 egg yolks
  • 1/2 cup of currant jelly
Instructions
  1. Pass the cooked egg yolks through a very fine sieve and beat with 80 g sifted powdered sugar and butter until a foamy mass is obtained.
  2. Add the vanilla, salt and flour sifted and knead everything together. Let the dough rest wrapped in aluminum foil for 2 hours in the refrigerator. Blanch the almonds in boiling water, drain them. Break them into not very small pieces and mix them with the sugar.
  3. Heat oven to 200 degrees. Spread the dough so that it has 4 mm thick and cut rings of a few 5 cm in diameter.
  4. Beat fresh egg yolks, Paint with them one side of the rings and introduce the wet part in the mixture of almonds and sugar. Place the doughnuts on a baking sheet with the wet part facing up and cook for 10-15 minutes to half-height.
  5. Detach the pastes from the tray and let them cool. Spread the bottom with the currant jelly, Join them two by two and sift over the rest of the powdered sugar.
