Caramelized Onion quiche
This is a recipe that has a duration of one 60 minutes and serve to 6 Diners. It can accompany with a wine red of your choice.
Ingredients:
Basic dough
1.5 Cup of wheat flour
100 g cold butter, cut in wedges
1 pinch of salt
3 tablespoons ice water or even stitch
For the filling
7 tablespoons of butter without salt
6 large onions, cut into thin slices
3 eggs
150 ml of sour cream
100 g of grated Gruyere or dish
100 g of cheese Parmesan grated by greater
Salt and pepper black freshly ground to the taste
Preparation:
For the dough
Mix the flour, the salt and the butter with the fingers until this brittle. Add the water gradually to form a homogeneous mass.
Roll out the dough and line a low double bottom, suitable for quiches, 27 cm in diameter. Cut the dough with a fork and bake in moderate (180° C) during 30 minutes (must not Golden, only firm).
For the filling
In a skillet or thick bottom Pan, melt the butter over low heat, Add the onion, stir occasionally and cook for 30 minutes until they are well gilded, but without getting burned.
Beat the eggs in a large bowl, Add the cream and season. Add the Gruyere and mix well. Add the onion and pour over the cake in the oven. Sprinkle with Parmesan cheese and bake in a moderate oven (190° C) during 15 to 20 minutes or until golden and firm filling.
Remove from oven and let stand for 10 minutes before serving. Decorate with sprigs of Basil.
