1 tablespoon lemon juice, malt vinegar or tamarind sauce
Wash chicken with cold water and dry with absorbent paper.
Mix garlic, Salt, pepper, cumin. cilantro, the fennel, cinnamon and 2 tablespoons oil. Unteer the chicken with this mixture, cover it and leave it marinating for 1 hour in the fridge.
Heat the rest of the oil in a large frying pan. Throw out the onion and, stirring, saute it until golden but soft. Add chicken and fry over medium-strong heat until golden brown.
Mix coconut milk with water and lemon juice, pour it over the chicken, cover it and let it cook slowly for a few 40 minutes until it is tender and the sauce has been reduced quite a bit. Serve with rice.
