  • 1 chicken from 1,5 kg, in pieces
  • 6 cloves of garlic, majados
  • 1 Cup (250 ml) of Apple Cider vinegar
  • 1 1/2 cups (375 ml) chicken broth
  • 1 Bay leaf
  • 1 teaspoon coriander seeds
  • 1 teaspoon black pepper corn
  • 1 teaspoon of achiote seeds, o 1/4 teaspoon of paprika and 1/8 teaspoon of turmeric
  • 3 tablespoons soya sauce
  • 2 tablespoons oil
  1. Mix all ingredients, except for the oil, in a big bowl. Cover it and put it in a refrigerator for 2 minimum hours.
  2. Put the mixture in a large, thick-bottomed frying pan, bring it to the boil over a high heat, Then reduce the Fire and let it keep cooking, capping, during 30 minutes. Remove the lid from the pan and continue to cook other 10 minutes or until the cock is tender. Take the chicken out of the pan and set aside. Bring back to the boil the sauce left in the pan and cook over a high heat for 10 minutes or until it's halved.
  3. Heat the oil in a wok or large nonstick frying pan and scold the chicken in a few, over medium heat, during 5 minutes or until golden and crispy. To serve, pour the reduced sauce mixture over the chicken pieces and accompany them with rice.
  • Achiote seeds (also called bija) can be purchased from stores specializing in asthetic products. They are used to color the oil where some food is to be fried.
