Ingredients
- 500 g thick chicken breast steaks
- 1 egg white, little whipped
- 2 teaspoons cornmeal
- 1/2 teaspoon salt
- 1/4 teaspoon finely grated ginger
- 3 tablespoons oil
Lemon sauce
- 2 teaspoons cornmeal
- 2 tablespoons water
- 6 teaspoons of refined sugar
- 2 tablespoons lemon juice
- 3/4 cup polio broth
- 2 teaspoons soy sauce
- 1 teaspoon dried sherry
Instructions
- Wash chicken in cold water and dry with absorbent paper. Cut the breasts diagonally into strips of 1 cm wide. Mix the egg white in a bowl, cornmeal, salt and ginger; put the chicken in and stir. Leave it marinating in the fridge 30 minutes.
- Heat the oil in a thick-bottomed wok or pan and stir to grease the base and sides. Remove the chicken from the marinade and drain it; throw it in the wok and saute it over a moderate heat without roasting. Put the chicken in a bowl; keep it warm while you prepare the sauce. Carefully remove the rest of the oil from the wok.
To make the lemon sauce
- Deslie the flour with water without clumps left; put it in the wok with the rest of the ingredients. Stir over a heavy heat and let it cook for 1 minute; add the chicken and stir it so it soaks well. Pass it to a bowl and serve with steamed rice or steamed noodles and vegetables.
Notes
- Prepare this dish immediately before serving.
