Ingredients
  • 1/4 cup of black mushrooms (Wild)
  • 2 cups of hot water
  • 1 tablespoon oil
  • 3 cloves of garlic, chopped
  • a piece of ginger from 6 cm, cut into thin strips
  • 500 g chicken breast fillets, in slices
  • 4 spring onions, chopped
  • 1 tablespoon Golden Mountain sauce
  • 1 tablespoon of fish sauce
  • 2 teaspoons brown sugar
  • l/2 red pepper, in thin strips
  • l/2 cup fresh coriander leaves
  • 1/2 cup fresh Thai basil leaves, in strips
Instructions
  1. Soak the mushrooms in a bowl of hot water for 15 minutes until soft and swollen. Drain them well and then chop them into thick pieces
  2. Heat oil in a large wok, Add the garlic and ginger and sauté them during 1 minute. Then put the chicken in several batches and sauté over high heat until it changes color.. Put all the chicken back in the wok, add the spring onion and Golden Mountain sauce and sauté during 1 minute more.
  3. Add the fish sauce. Sugar and mushrooms, Stir it well, Cover the wok and let cook for 2 minutes. Serve immediately, Spreading the pepper over, cilantro and basil; Accompany with steamed rice.
Notes
  • Black mushrooms (Wild) dry increase several times their size, fluffing, when soaked in hot water. They can be found in Asian food stores.
