Soak the mushrooms in a bowl of hot water for a 15 minutes until soft and swollen. Drain them well and then chop them into thick pieces
Heat oil in a large wok, add the garlic and ginger and sauté during 1 minute. Then put the chicken in several batches and saute over a strong heat until it changes color. Put all the chicken back in the wok, add the spring onion and Golden Mountain sauce and sauté during 1 minute more.
Add the fish sauce. sugar and mushrooms, remove it well, cover the wok and leave to cook for 2 minutes. Serve immediately, spreading the pepper over the top, coriander and basil; accompany with steamed rice.
Black mushrooms (Wild) drys increase their size several times, sponging, when soaked in hot water. They can be found in Asian grocery stores.
