Ingredients
  • 1/4 cup of black mushrooms (Wild)
  • 2 cups of hot water
  • 1 tablespoon oil
  • 3 cloves of garlic, chopped
  • a piece of ginger 6 cm, cut into thin strips
  • 500 g of chicken breast dc steaks, slices
  • 4 spring onions, chopped
  • 1 spoonful of Golden Mountain sauce
  • 1 spoonful of fish sauce
  • 2 teaspoons of brown sugar
  • l/2 red pepper, in thin strips
  • l/2 cup fresh coriander leaves
  • 1/2 cup of fresh Thai basil leaves, in strips
Instructions
  1. Soak the mushrooms in a bowl of hot water for a 15 minutes until soft and swollen. Drain them well and then chop them into thick pieces
  2. Heat oil in a large wok, add the garlic and ginger and sauté during 1 minute. Then put the chicken in several batches and saute over a strong heat until it changes color. Put all the chicken back in the wok, add the spring onion and Golden Mountain sauce and sauté during 1 minute more.
  3. Add the fish sauce. sugar and mushrooms, remove it well, cover the wok and leave to cook for 2 minutes. Serve immediately, spreading the pepper over the top, coriander and basil; accompany with steamed rice.
Notes
  • Black mushrooms (Wild) drys increase their size several times, sponging, when soaked in hot water. They can be found in Asian grocery stores.
