Ingredients
  • 8 Bacon slices
  • 4 halves of breast of chicken without skin, of 1 / 2 inch thick
  • 1 (10 Oz) of spinach chopped frozen, thawed and squeezed
  • 1 Cup of cheese blue crumbled
  • 2 tablespoons of all-purpose flour
  • 1 / 8 teaspoon black pepper
  • 1 / 4 teaspoon salt
  • 2 tablespoons of olive oil
Instructions
  1. Cook bacon until crispy. I prefer to use a grill inside. Bacon can also be cooked in a skillet over medium-high heat, or the oven's microwave in approximately 1 minute per slice. Drain on paper towel, and leave of side.
  2. Preheat the oven to 350 degrees F (175 degrees C). In a medium bowl, mix the spinach and cheese blue. Collapse is in the bacon, and stir to distribute.
  3. Lay the halves of breast of chicken on a surface clean, and evenly distribute the mixture of spinach in the center of them. Times the chicken over the filling, and secure with toothpicks. Mix the flour, salt and pepper in a dish. Roll the chicken in the flour to cover.
  4. Heat the oil in a frying pan over medium-high heat. Quickly Brown each piece of chicken on top and bottom. Remove to a dish of baking lightly greased and covered with a lid or aluminum foil.
  5. Bake for 30 minutes in the preheated oven, until the juices run clear chicken, and the filling is hot.
