Ingredients
- 4 frozen puff pastry sheets

- 100 g sugar
- 200 g grated peeled almonds
- 1 egg yolk
- the juice of 2 lemons and the grated bark of 1

- 1 egg yolk
- 2 spoonfuls of lemon jelly
Instructions
- Let the puff pastry defrost in 30-60 minutes. Heat oven to 225 degrees.
- On a lightly floured surface, extend the mass to twice its length. Wet a tray of oven with cold water. Put two of the dough layers together on the tray. Mix sugar, almond, the yolk, lemon juice and zest and spread over the dough.
- Spread the edges of the dough with whipped yolk and place the other two layers of dough on top.
- Tighten the edges slightly, smear the surface with the rest of the yolk and puncture the dough several times. Cook 10-15 minutes to half-height. Stir in the lemon jelly and spread the cake still hot with it. Once cold, divide it into equal rectangles.
