Ingredients
  • 4 frozen puff pastry sheets

  • 100 g sugar
  • 200 g grated peeled almonds
  • 1 egg yolk
  • the juice of 2 lemons and the grated bark of 1

  • 2 spoonfuls of lemon jelly
Instructions
  1. Let the puff pastry defrost in 30-60 minutes. Heat oven to 225 degrees.
  2. On a lightly floured surface, extend the mass to twice its length. Wet a tray of oven with cold water. Put two of the dough layers together on the tray. Mix sugar, almond, the yolk, lemon juice and zest and spread over the dough.
  3. Spread the edges of the dough with whipped yolk and place the other two layers of dough on top.
  4. Tighten the edges slightly, smear the surface with the rest of the yolk and puncture the dough several times. Cook 10-15 minutes to half-height. Stir in the lemon jelly and spread the cake still hot with it. Once cold, divide it into equal rectangles.
