Ingredients
- 500 g rye flour
- 50 g acid mass (of the bakery)
- 1/2 l of water approx
- 10 g pressed yeast

- 20 g butter

- 50 g canned mushrooms
- 100 g sausage dough

- 1 egg yolk
- 1 tablespoon heavy cream

Instructions
- Sprinkle a baking tray with flour. With rye flour and all the ingredients included up to the salt, prepare a dough.
- Season the meat cut into 4 equal parts, Brown it in the butter and let it cool. Peel the shallots, Drain the mushrooms, Chop both and toss them with the sausage batter, herbs, the yolk, Cream and spices.
- Line the poularde pieces with this dough. Roll out the bread dough so that it has 5 mm thick, Cut into it 4 squares and wrap a piece of poularde with each of them.
- Squeeze the edges tightly. Brush the surface of the breads with beaten egg yolk and sprinkle the cumin and marjoram on top. Cook 30-40 minutes in the bottom of the oven and serve hot or cold.
