  • 1 large purple Eggplant
  • 1 Onion
  • 1 Tin of tomato to the natural
  • 2 cloves garlic, crushed
  • 1 Cup of red wine
  • 1 tablespoon of corn flour
  • 1 Cup of plain yogurt, low-fat
  • 100 GR. grated mozzarella cheese
  • 2 clear whites
  • Optional, 200 GR. textured vegetable protein
  1. Cut the eggplant in thin slices and cook in the oven, over medium heat, with a little water until softened.
  2. Chop the onion, Sauté it in a skillet with vegetable spray teflon, Add the garlic, crushed tomatoes, the wine, salt and pepper. Add textured vegetable protein. Add the corn flour, soaked in cold water and stir until it thickens well.
  3. Mix all ingredients with Eggplant. Have this mixture in a baking dish and cover with the whites along with the yogurt and mozzarella.
