I'd like to share with you the recipe of the Red Mojo Picon (a type of sauce typical of the Canary Islands)

  • – 1 Head of garlic
  • – 2 chilli peppers
  • – 1 teaspoon of cumin in grain
  • – 1 teaspoon of paprika
  • – 4 tablespoons vinegar
  • – 15 tablespoons of olive oil
  • -Salt to taste
  1. The peeled and chopped garlic is crushed in a mortar, the cumin, clean (granillas) tile peppercorns and coarse salt, until they form a smooth paste.
  2. Add the paprika and slowly the oil and vinegar resulting paste thickens.
  3. This paste can lighten the taste with a cup of water.
  4. This sauce can be stored for months in the fridge.
  5. Can be a recipe for Red mojo softer if we use sweet peppers instead of chilli peppers.
