Surely after this holiday season others who would like to get look with a few pounds. You don't have to die of hunger to succeed! The essential is to know how to replace high-calorie foods. On this occasion I would like to introduce these light breaded Eggplant, which by the way, they are very easy to prepare.

Ingredients
- 2 Eggplant
- Bread crumbs (amount needed)
- Parsley and garlic
- coarse salt
- Salt fine (to taste)
- 2 eggs
Instructions
- Cut the aubergines into slices of about 2 cm thick. Put them in a bowl and place them with coarse salt. Let stand a few minutes. Then, with a paper towel to remove excess salt and fluid.
- In a bowl, beat the eggs with parsley, garlic and salt. Join the Eggplant mixture.
- As a consequence, put the bread crumbs in a bowl and, pass the eggplants.
- Place patties on a suitable baking dish. To avoid us sticking, What is convenient is utiilizar vegetable spray, that way we could replace the use of oil.
- Bake in oven about 15 to 20 minutes.
Notes
- These patties are ideal to accompany salads.
