Ingredients
  • 2 Eggplant
  • Bread crumbs (amount needed)
  • Parsley and garlic
  • coarse salt
  • Salt fine (to taste)
  • 2 eggs
Instructions
  1. Cut the aubergines into slices of about 2 cm thick. Put them in a bowl and place them with coarse salt. Let stand a few minutes. Then, with a paper towel to remove excess salt and fluid.
  2. In a bowl, beat the eggs with parsley, garlic and salt. Join the Eggplant mixture.
  3. As a consequence, put the bread crumbs in a bowl and, pass the eggplants.
  4. Place patties on a suitable baking dish. To avoid us sticking, What is convenient is utiilizar vegetable spray, that way we could replace the use of oil.
  5. Bake in oven about 15 to 20 minutes.

  • These patties are ideal to accompany salads.
