Ingredients
  • 2 tablespoons of olive oil
  • 1 medium onion, finely chopped
  • 500 g of lean chicken meat, minced
  • 2 teaspoons paprika
  • 1/4 teaspoon of chilli powder
  • 1/2 cup of freshly grated bread
  • 1/4 cup sour cream
  • 1 teaspoon salt
  • 1/2 teaspoon white pepper
  • oil for frying
  • 2 big new potatoes in very thin slices
  • 8 thick slices of French bread
  • bread and butter
  • drained pickles
  • 1 small green pepper, in fine rings
  • whole egg mayonnaise
Instructions
  1. In a small frying pan, cold the onion over medium heat 3 minutes or until tender and golden. Remove from heat and allow to cool. Knead the minced meat with the paprika, chilli powder, bread crumbs, cream, Salt, pepper and onion. Divide the mass into 4 porciones.
  2. Pour oil into a medium saucepan to about 2 cm and warm it up. Dry the potatoes with kitchen paper and fry them in batches of 3 minutes or until golden brown. Let them drain on absorbent paper, cover them and make them warm.
  3. In a large skillet or Grill, well smeared with oil, cold portions 3 minutes per side or until golden brown and well done.
  4. Roast the slices of bread and, If you want to, brush with butter. On top of 4 arrange the overlapping potato slices, pepper rings, the burger, pickles and mayonnaise. Cover it all with another slice and decorate it with fresh herbs.
Notes
  • Chicken minced meat can be purchased from your usual butcher's or pollería, Although, if you prefer, you can also prepared at home. Use, in that case, skinless chicken thighs or breast fillets, remove excess fat from meat, chop it and chop it up the chopper until it's fine.
