  • 1 Kg of prawns
  • 2 handles
  • 1 DL of olive oil
  • 2 dl of salt mayonnaise
  • 50 g of spring onions
  • 50 g of pickles
  • 50 g of boneless green olives
  • 1 teaspoon mustard
  • the juice of 1 lemon
  • 1 tablespoon chopped chives
  • Pepper ground
  • Salt
  1. Mix the mayonnaise in a bowl, mustard and 1 tablespoon lemon juice. Add the spring onions, pickles and minced olives, splash and book in the fridge covered with a film.
  2. Cut the handles into small dice. Drizzles with lemon juice.
  3. Peel, remove the heads to the prawns and the intestinal cord from the spine.
  4. Heat the oil in a frying pan and sauté the prawns over a live heat during 1 minute on each side. Remove from the pan and drain on the absorbent paper.
  5. Serve the prawns together with the mango dice and the sauce. Sprinkle with chopped chives.
