  • 1 kg. Canary beans, soaked in cold water overnight
  • 250 GR. of pork jowl, cut in wedges *
  • 100 GR. pork, cut in wedges of 3 cm approx..
  • 150 GR. white onion(1 medium onion approx.)
  • 1 red onion
  • 6 cloves of garlic, peeled and crushed
  • Salt and pepper
  • Ground cumin
  • ½ Cup of olive oil, If flavor seems very strong, or Virgin olive oil, You can replace it with vegetable oil or mix proportion
  • 2 AJI mirasol, washed and seeded
  • 3 tablespoons sesame seeds (Sesame), Toast
  • * It can be replaced with pieces of bacon, but it will change the flavor to smoked beans
  1. Cook the pork jowl with an onion peeled and whole beans in water.
