  • 3 French or Asian charlots
  • 500 g of hokkien noodles, frecos
  • 1 tablespoon oil
  • 6 cloves of garlic, chopped
  • 2 teaspoons fine chopped chilli (Optional)
  • 1-2 tablespoons of red curry paste
  • 350 g of lean chicken or pork, chopped fine
  • 1 carrot, chopped into thin strips
  • 2 tablespoons of fish sauce
  • 2 tablespoons of sugar Brown
  • 3 spring onions, fine lyanes
  • 1/4 cup of fresh coriander leaves
  • basic sauce, to boil
  1. Peel and chop the shallots.
  2. Cook the noodles in a saucepan or wok with boiling water during 2-3 minutes until they're on point. Pour and wait for the oil to heat cn a wok or a large frying pan. Add the shallots, garlic, chillies and curry pasta, cold and stirs for 2 minutes or until they release their scent. Cook chicken or pork in wok in 2 batches during 2 minutes until the color of the meat changes.
  3. Put all the meat in the wok. Add the carrot, fish sauce and brown sugar, boil, Serve the noodles in the deep plates and mix with portions of the chicken and spring onion mixture. Garnish with coriander leaves. Serve and accompany immediately with the basic sauce.
  • Serve immediately, otherwise the noodles and vegetables will soften.
