Ingredients
- 3 French or Asian charlotes
- 500 g hokkien noodles, Frecos
- 1 tablespoon oil
- 6 cloves of garlic, chopped
- 2 teaspoons finely chopped chilli (Optional)
- 1-2 tablespoons of red curry paste
- 350 g chicken or lean pork, fine chopping
- 1 carrot, chopped into thin strips
- 2 tablespoons of fish sauce
- 2 tablespoons of sugar Brown
- 3 spring onions, finely chopped
- 1/4 cup fresh coriander leaves
- Basic sauce, to boil
Instructions
- Peel and chop the shallots.
- Cook the noodles in a saucepan or wok with boiling water for 2-3 minutes until they are at their point. Pour in and wait for the oil to heat in a wok or a large skillet.. Add the shallots, garlic, chillies and curry pasta, cold and stir during 2 minutes or until they release their aroma. Cook the chicken or pork in the wok in 2 Batches during 2 minutes until the color of the meat changes.
- Put all the meat in the wok. Add the carrot, Fish sauce and brown sugar, boil, Serve the noodles in the deep dishes and mix with portions of the chicken and scallion mixture. Garnish with coriander leaves. Serve and accompany immediately with the basic sauce.
Notes
- Serve immediately, otherwise the noodles and vegetables will soften.
