Ingredients
  • oil for frying
  • 1/2 Cup sesame seeds
  • 1 1/2 cups of thick tomato sauce
  • 1 teaspoon of brown sugar
  • 2 teaspoons of balsairmco vinegar
  • 200g of different lettuce and escarole leaves
Falafel
  • 1 small onion in two halves
  • 1 cup of fresh parsley
  • 1/4 cup fresh coriander
  • 300g of chickpeas,or white beans, cooked and rinsed
  • 1 teaspoon of cumin ground
  • 1 teaspoon of coriander ground
Instructions
  1. For the falafel, whisk in the blender the onion, parsley and coriander until thin; add the other ingredients and beat others 15 seconds until you get a homogeneous paste.
  2. Heat the oil in a frying pan. Form with the pasta 8 small burgers and pass them through the sesame so they fit well. Fry them in several batches over medium heat during 2 minutes on each side until they are well golden and made inside. Drain them on absorbent paper.
  3. While frying the falafel, bring the tomato sauce with the sugar and vinegar to the boil and simmer for a long time 3 minutes.
  4. Garnish dishes with lettuce and escarole leaves, serve the falafel and salséelos.
