  • 4 butterhead lettuce plants
  • 50 GR. Bacon cut in very thin slices
  • 2 onions
  • 2 tender carrots
  • Salt and pepper
  • 1/4 liter of vegetable broth
Ingredients for the sauce
  • 20 GR. butter
  • 1 tablespoon flour flush
  • 1 tablespoon of tomato
  • 1/4 liter of cooking Greens
  • Salt and pepper, to taste
  • Juice of 1/2 lemon
  • 1 pinch of sugar
  1. Remove the outer leaves of lettuce and leave whole heart. Dipping the hearts during 2 o 3 minutes in two litres of boiling water. Remove with slotted spoon and drain. Reserve the cooking water.
  2. Divide heart in four, remove the trunk. Place the slices of bacon (smoked pancetta) at the bottom of a broiler pan. Peel the onions and cut them into rings, finite sliced carrots.
  3. Distribute two vegetables evenly over the bacon, Add salt and pepper, then place lettuce rolls, return to season, cover with the broth.
  4. Place the source in the oven, covered with aluminum foil. Cook for 20 to 25 minutes. For the sauce, put the butter in a pan, Add the flour and mix with a spoon of butter.
  5. When it is lightly browned add tomato pulp, diluted in 1/4 liter of liquid from cooking the lettuce hearts, season with salt and pepper, lemon juice and a pinch of sugar, Let it thicken over low heat.
