  • 750 g of pumpkin
  • 1 1/2 tablespoons oil
  • 3 cloves of garlic, fine chopped
  • 1 piece of 4 cm of fresh ginger, grated
  • 6 Asian shallots, chopped
  • 1 tablespoon of fine brown sugar
  • 1/2 Cup (125 ml) chicken broth
  • 2 tablespoons of fish sauce
  • 1 tablespoon of lime juice
  1. Peel the squash and cut into large pieces Heat the oil into a thick-bottomed frying pan, add the garlic, ginger and chopped shallots v sofrialos during 3 minutes over medium heat, stirring often.
  2. Add the pumpkin pieces and sprinkle the sugar on top. Let it cook for 8 o 10 minutes. turning the pieces at regular intervals until the pumpkin is golden and soft, but it doesn't undo.
  3. Add chicken stock and fish sauce, Bring it to the boil and keep cooking, circling the pumpkin at regular intervals until all the broth has evaporated. Pour the lime juice over the top, season to taste with salt and pepper and serve immediately.
  • This dish is delicious if accompanied by a curry sauce and steamed rice.
  • The sweeter the pumpkins (creamy or Japanese ones are especially suitable) the more delicious and softer this dish will turn out.
