Ingredients
  • 2 medium chicken breast fillets (a few 350 g)
  • 1 big green papaya
  • 1 Cup (20 g) fresh Vietnamese mint leaves
  • 1/2 Cup (15 g) fresh coriander leaves
  • 2 tablespoons of fish sauce
  • 2 red chillies, seedless and thinly sliced
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon of lime juice
  • 2 cucharaditas de azúcar
  • 2 spoonfuls of peanuts, toasted and chopped
Instructions
  1. Ponga el pollo en una sarten y cúbralo con agua. Déjelo cocer a luego suave durante 10 minutos o hasta que esté cocido por dentro. Don't let the water boil, sólo debe cocer suavemente para que el pollo no se quede estropajoso. Remove the chicken from the broth and let it cool completely. Cut it back into thin slices.
  2. Peel the papaya with a pelapatalas and remove the seeds with a sharp knife. cut the papaya meat into thin, long strips (Juliana). Put the mint and coriander in a bowl, sliced chilli, fish sauce, vinegar, el zumo de lima y el azúcar; stir it all gently until well mixed.
  3. Arrange the papaya mixture in a serving dish and place the thin slices of chicken on top. Sprinkle the peanuts and serve immediately.
Notes
  • Green papaya is used to give acidity and texture to this dish.
