  • 250 g of soba noodles
  • 1 sliced carrot
  • 2 sliced celery carvings
  • 1 sliced cucumber
  • 1/4 cup of ginger in vinegar

  • 3 eggs

  • 1 teaspoon sesame oil
  • 2 tablespoons rice vinegar
  • 2 teaspoons soy sauce

  • 2 spoonfuls of lime juice
  • 2 tablespoons of toasted sesame
  1. Cook the noodles in a casserole with boiling water during 6 minutes or until tender; drain and rinse them under the tap.
  2. Scald carrot and celery during 1 minute; Drain, immerse them in cold water and drain them again, Put the noodles in a salad bowl, cucumber, the ginger and the cilantro; remove everything gently.
  3. Lightly whisk the eggs with 1 tablespoon water; heat a little oil in a frying pan and set a round tortilla on both sides. Cut it into thin strips and add them to the salad.
  4. Mix the ingredients of the dressing, throw it in the salad and stir well.
