Ingredients
  • 100g of celopcan noodles (of mung beans)
  • 2 thin-skinned cucumbers
  • 2 shredded carrots
  • 1 Cup of bean sprouts
  • 1 thinly sliced purple onion
  • 1/2 cup chopped fresh cilantro
  • 1 cup chopped fresh mint
  • 1/4 cup of unsalted roasted peanuts, chopped
  • a few lettuce leaves to serve
Instructions
  1. Whisk the ingredients of the dressing with a fork in a bowl and set aside.
  2. In another large, heat-resistant bowl, put the noodles in and cover them with boiling water; soak them 5 minutes and then drain and cut them into not-too-long pieces with scissors. Put them in the dressing bowl and move them well.
  3. Run the cucumbers with a pelavegetable in wide, thin strips and add to the noodle bowl with the carrot, outbreaks, the onion, mint and almost all the peanuts. Remove everything carefully. Spread the lettuce leaves in a large bowl, spread the vegetables with the noodles on top of it and sprinkle the rest of the peanut.
