For the vinaigrette

For salad
  • 2 chicken breast halves, approximately 1 pound, Boneless and Skinless
  • 1 TSP. Extra Virgin olive oil
  • 2 hearts of Romaine lettuce, washed, dry and cut into small pieces (approximately 4 cups)
  • 1 ripe avocado, sliced thin
  • 1 Red grapefruit, segmented
  • ¼ red onion, sliced into thin slices
Instructions
  1. In a small bowl, mix lemon juice, garlic, honey, pepper and marinade. In a blender, slowly add olive oil, and stir constantly until it is well combined. Add the cilantro and book.
