Ingredients
  • 1/4 cup of sweet chilli sauce
  • 1 teaspoon of soaked garlic
  • 1 teaspoon grated ginger
  • 2 tablespoons of soy
  • 500g of firm tofu, dice 1 cm
  • 2 tablespoons oil
  • 2 sliced carrots
  • 2 sliced courgettes
  • 6 spring onions, in slices
  • 100g of tender peas with its pod, no tips or strands
Instructions
  1. Mix the chilli sauce in a bowl, garlic, ginger and soy sauce; add the tofu, tape and marinelo 10 minutes.
  2. Drain the tofu and set aside the marinade. Heat half the oil in a large frying pan and fry the tofu over a high heat 4 minutes, or until it catches a nice golden color everywhere; spin often. Take it out and set it back.
  3. Heat the rest of the oil and saute the vegetables over a high heat 2-3 minutes. Put the tofu back on and water with the marinade reserved. Bring it to the boil, stirring carefully to mix everything well. Remove from heat and serve immediately
