Clean the squid and cut into rings (or buy squid rings).
Make a candy with the water, sugar, squid ink and a few drops of lemon. When it starts to take color , remove from the heat and drop , with the help of a spoon, on baking paper smeared in oil, giving it a shape of pearls or threads. Let cool.
Heat salted water in a saucepan. Scald the rings in boiling water during 30 seconds and drain.
Peel the tomatoes and dice them into dice. Add the chopped garlic clove and season with a pinch of salt, oil and Apple Cider vinegar. Place the seasoned tomato in a bowl, squid rings sprinkled with chopped parsley and garnished with bits of caramel.
Squid, if they are cooked fried or grilled it is better to consume them on the spot, because if they don't get dry and soft.
