Ingredients
- 1 black eggplant and 1 violet
- 2 red onions
- 1 Bell Pepper
- 2 Round pumpkins
- 2 leeks
- Garlic
- Fresh basil
- 100 GR. of cheese in slices
- Arugula or green leaves amount needed
- 10 Black breads with seeds
- Olive oil quantity needed
- Salt and pepper to taste
Instructions
- Process basil leaves with olive oil and 1 clove of garlic. Cut the eggplants with skin, previously washed, in thin sheets. Cook them on the grill with a few drops of olive oil and brush them with basil oil. Wash leeks and grill until tenderized. Flavor with basil oil.
- Do the same with pumpkins, The Morrón, onions, sliced. Salt and pepper and reserve. Process arugula leaves with garlic, olive oil, so that an arugula pesto remains.
