Ingredients
  • 2 tablespoons oil
  • 1 chopped onion
  • 2 tablespoons of Indian sweet curry paste
  • 1 teaspoon of cumin powder
  • 1 teaspoon of ground turmeric
  • 1 kg of chopped pumpkin
  • 2 new potatoes, without peeling, cut into bites
  • 200 ml of vegetable stock
  • 1 tablespoon orange jam
  • 1 tablespoon of lime juice
  • 1 teaspoon of brown sugar
  • 2 tablespoons of coconut cream
  • 200 g of small bok choy, cut into two halves along
  • fresh coriander leaves, to decorate
Instructions
  1. Heat the oil in a large, deep saucepan, put the onion with the curry, cumin and turmeric, cover and let it poach over medium heat some 5 minutes.
  2. Add the pumpkin, potato, broth and jam; turn the fire, cover the casserole and let it all cook for 12 minutes
  3. Then add the lime juice, sugar and coconut cream, remove and put the boy choy on top of everything; cover again and let Cook 2-3 minutes or until the bok choy is al dente. Garnish with coriander and serve
