Ingredients
  • 2 tablespoons oil
  • 1 chopped onion
  • 2 tablespoons sweet Indian curry paste
  • 1 teaspoon cumin powder
  • 1 teaspoon ground turmeric
  • 1 kg chopped pumpkin
  • 2 new potatoes, without peeling, cut into bites
  • 200 ml of vegetable stock
  • 1 tablespoon orange jam
  • 1 tablespoon of lime juice
  • 1 teaspoon brown sugar
  • 2 tablespoons coconut cream
  • 200 g of small bok choy, cut into two halves lengthwise
  • a few fresh coriander leaves, to decorate
Instructions
