Ingredients
- 2 tablespoons oil
- 1 chopped onion
- 2 tablespoons sweet Indian curry paste
- 1 teaspoon cumin powder
- 1 teaspoon ground turmeric
- 1 kg chopped pumpkin
- 2 new potatoes, without peeling, cut into bites
- 200 ml of vegetable stock
- 1 tablespoon orange jam
- 1 tablespoon of lime juice
- 1 teaspoon brown sugar
- 2 tablespoons coconut cream
- 200 g of small bok choy, cut into two halves lengthwise
- a few fresh coriander leaves, to decorate
Instructions
- Heat the oil in a large, deep saucepan, Put the onion with the curry, Cumin and turmeric, Cover and let it sash over medium heat a few 5 minutes.
- Add the pumpkin, potato, Broth and jam; Turn up the heat, Cover the casserole and let it cook during 12 minutes
- Then add the lime juice, Sugar and coconut cream, Stir and put the boy choy on top of everything; Cover again and let cook 2-3 minutes or until the bok choy is al dente. Garnish with cilantro and serve
