Ingredients
- 2 tablespoons oil
- 1 chopped onion
- 2 tablespoons of Indian sweet curry paste
- 1 teaspoon of cumin powder
- 1 teaspoon of ground turmeric
- 1 kg of chopped pumpkin
- 2 new potatoes, without peeling, cut into bites
- 200 ml of vegetable stock
- 1 tablespoon orange jam
- 1 tablespoon of lime juice
- 1 teaspoon of brown sugar
- 2 tablespoons of coconut cream
- 200 g of small bok choy, cut into two halves along
- fresh coriander leaves, to decorate
Instructions
- Heat the oil in a large, deep saucepan, put the onion with the curry, cumin and turmeric, cover and let it poach over medium heat some 5 minutes.
- Add the pumpkin, potato, broth and jam; turn the fire, cover the casserole and let it all cook for 12 minutes
- Then add the lime juice, sugar and coconut cream, remove and put the boy choy on top of everything; cover again and let Cook 2-3 minutes or until the bok choy is al dente. Garnish with coriander and serve
