Ingredients
  • 1 kg. sugar
  • 100 g. glucose
  • 1 glass of water (25 CL.)
  • Vanilla essence
  • Preparation
Instructions
  1. Add the sugar and water in a saucepan.
  2. Add the glucose and mix well.
  3. Heat over low heat until syrup.
  4. When the syrup reaches 110 ° C, turn off the heat.
  5. Moisten a clean marble surface.
  6. Spritz with water and dumps syrup.
  7. Leave to cool a little.
  8. It is now working with a metal spatula (scraping the marble well to carry all the sugar to a single point).
  9. Now do the same thing, but in reverse.
  10. To transform the syrup in fondant, extend it back into the marble and raises only the upper part of the coat of sugar, doing the same thing repeatedly, until a whitish mass.
