1 kg. sugar
100 g. glucose
1 glass of water (25 CL.)
Add the sugar and water in a saucepan.
Add the glucose and mix well.
Heat over low heat until syrup.
When the syrup reaches 110 ° C, turn off the heat.
Moisten a clean marble surface.
Spritz with water and dumps syrup.
Leave to cool a little.
