  • 1 suckling pig of 5 kg. boning
  • 1 medium onion
  • 3 clean leeks (white part)
  • 8 tablespoons of olive oil
  • 4 slices of bread lactal
  • 2 tablespoons milk
  • 1 1/2 Cup of cooked spinach
  • 200 GR. smoked pancetta
  • 600 GR. of minced pork
  • 2 Chili Peppers Roasted Peppers, peeled and chopped
  • 1 Cup of cooked peas
  • 4 tablespoons chopped parsley
  • 3 tablespoons of chopped chives
  • Salt and black pepper to taste
  • 1 Cup grated cheese
  • 6 eggs
  • 2 tablespoons of chopped thyme
  • 1/2 tablespoon ground chilli
  • 4 teaspoons minced garlic
  1. In a saucepan Cook chopped leeks with 4 tablespoons of olive oil, they are tender but not gold.
  2. Soak the bread in milk 20 minutes. Chop the cooked spinach and Bacon, mix them in a bowl with the minced pork, the peppers, peas, the onion, leeks, bread crumb, herbs, salt and pepper.
  3. Add the grated cheese and the beaten eggs. Season the pork with salt and pepper.
  4. Fill it with the mixture, fold the sides and cook with cotton yarn so the filling does not escape.
  5. Seasoning meat for outside with the remaining oil, thyme, AJI, Salt, pepper and the chopped garlic.
  6. Cook the pork in moderate oven 2 1/2 hours. Remove it, discard the thread, place it in a bowl and serve with salad or stuffed tomatoes. Serve it hot or cold.
  7. The filler can be used for lamb, cow (Flank Steak and tail of rump), of chicken, etc.
