1 kg of green apples, peeled, heartless and chopped
125 g of dried apricots, chopped
2 medium onions
1 chopped garlic clove
1 cup of sultanas or cup of chopped walnuts
2 teaspoons salt
1/4 teaspoon cayenne pepper
1 teaspoon ground ginger
1 cup of malt vinegar
1 Cup brown sugar
Pour in the apple, Apricot, the finely chopped onion, garlic, the sultanas, nuts, Salt, pepper, ginger and vinegar in a heavy-bottomed frying pan. Simmer 5 minutes, stirring occasionally; cover and leave it 20 minutes.
Add the sugar and cook 10 minutes more without covering it up and stirring occasionally, until the mixture takes on jam consistency.
Pour the mixture into sterilized jars, previously heated, and close immediately. Don't open them until past 2 weeks.
