  • 1 young goat's 1 to 3 months, of 2 to 3 kilos, cut into medium pieces
  • 2 lemons
  • 2 tablespoons oil
  • 2 cups of grated onion
  • 5 garlic cloves, crushed
  • 1 tablespoon of Worcestershire sauce
  • 1/2 teaspoon black pepper
  • 1/2 Bay leaf
  • 2 sprigs of fresh oregano
  • 1 1/2 tablespoon of salt
  • 3/4 cups of oil
  • 1/2 spoonful of sugar
  • 1 cup chopped tomato, without skin or seeds
  • 1/4 Cup of paprika, Red chopped
  • 1 tablespoon chopped sweet pepper
  • 3 cups of beef broth
  • 1/2 wine cup Madeira or sweet Muscat type.

  1. Is clean well the goat, is rubbed with lemon and is enguaja well under running water. Is dry with paper absorbent.
  2. Prepare a marinade by mixing the 2 tablespoons oil"onion, garlic, Worcestershire sauce, pepper, laurel, oregano and salt. Rub the goat with the marinade and put aside for 2 to 3 hours.
  3. In a pot put 3/4 cup oil to heat. Add the sugar forming a pile in the center of the pot and without stirring it left Brown completely until they are dark brown, but without getting burned.
  4. Cleaned the goat from marinade, that put apart and added 3 or 4 at the same time to the cauldron pieces to brown them evenly. Will putting aside already gold pieces.
  5. In the cauldron are added the marinade, the tomato, the pi-menton and the sweet pepper and cook stirring constantly by 10 minutes.
  6. The goat back to the pot and add the conso-me of meat or water and seasoning is corrected if necessary, Is lid and cooked over low heat for 20 minutes or even soften. Add the wine and cook for 25 to 30 minutes to reduce the sauce.
